ΚΟΚΟΣ, ΛΑΙΜ ΚΑΙ ΚΟΤΟΠΟΥΛΟ ΚΑΡΙ ΜΕ Aσιατικό broccolini Coconut milk and the zest and juice of a lime is just my favourite combo for a light and refreshing curry Serving it with veg fried off in soy sauce (I only had broccolini) just bulks up the meal as a whole and the more veg the better Recipe below • Chicken breast – cubed • Sesame Oil • 1 – 2 tsp turmeric • Onion – chopped • 2 garlic cloves – finely chopped • Large piece of ginger – chopped • 1 Chilli – chopped • Fresh coriander • 1 tin Coconut Milk • 1 lime • Chickpeas (optional) • Extra veg – Broccolini (or any green veg) • Soy sauce – Put your extra veg/broccolini on to boil. In some oil, fry off the chicken with turmeric until cooked, and set aside in a bowl. In the same pan, fry off onions, garlic, ginger and chilli until onion starts to soften then throw in a handful of coriander. Pour in coconut milk, and stir. Then add the zest of 1/2 a lime but the juice of a full lime, plus salt and pepper. Add chickpeas if using and add the chicken back into the pan. Simmer for about 10 mins and taste to see if you want more lime/salt/pepper. The broccolini should be boiled and cooked at this stage, so drain it and add it back to the saucepan with some soy sauce and olive oil- I probably used about 1 TBSP tsp of soy but just as much as you like. Serve the curry over rice with extra veg on the side. DONE As always, use whatever veg is your favourite, or what you have on hand! For the Asian veg I would suggest using green beans, sugar snaps, Bok Choy, baby corns, or even some mushrooms! Also a top tip – be careful of splattering when cooking the chicken/sauce, as the turmeric stains very badly into a highlighter yellow colour (I learnt the hard way on my Smeg kettle ) ENJOY
